Gari
Gari is the sweet, thin-sliced pickled ginger served beside sushi — a palate cleanser to nibble between pieces, not a topping to pile onto the fish.
Gari is young ginger sliced paper-thin and pickled in sweetened vinegar. Its job is to reset your palate between different neta so each fish lands cleanly — a bite of gari, not a garnish for the nigiri.
The color tells a small story: naturally young ginger turns a pale pink on its own, while bright pink gari is usually dyed. Either way, eat it on the side.
