Temaki

Temaki is a hand roll — a cone of nori filled with rice and fillings, made to eat immediately while the seaweed is still crisp.

Temaki (“hand roll”) skips the mat: the chef rolls a sheet of nori into a cone, packs in rice and fillings, and hands it straight to you. It’s casual, generous, and a fixture of home sushi nights.

The one rule is speed — eat it right away. A hand roll is engineered for the contrast of crisp nori against warm rice and cool filling, and that crispness is gone within minutes.
